Stuffed Peppers


1 package lean ground turkey
1 cup uncooked brown rice
5 yellow, red or green peppers
1/2 onion 
1 tablespoon basil
1 tablespoon parsley
1 teaspoon sea salt

Pre-heat oven to 350 degrees.

First make brown rice according to box instructions. Then cook ground turkey in a skillet until no pink is visible.  

Add in rice, onion, salt, parsley and basil. Let it simmer together for about 10 minutes.

Remove and discard the tops, seeds and membranes from the peppers. Arrange on a baking sheet.

Stuff the peppers with the mixture until full.

Cook for about 45 minutes.

Sprinkle with cheese if desired.

  2. I am so inspired by your posts! I am on month two of my "getting my pre baby body back" and the Insanity challenge-it is so encouraging to see another mom post baby and looking like that. It is a lot of hard work and sacrifice definately, but it gets easier with time. I saw a quote once that said, "Nothing tastes as good as skinny feels!" ....and...I am really starting to believe that! (Don't get me wrong, I still love food, I am just learning self control and moderation!) On that note, I am so exited to try out this recipe tonight! I am trying to eating leaner meats and so I had turkey in the freezer and wasn't sure how to use it until now. The perfect thing is, we also have 2 peppers in the fridge that also did not have a plan until now. THANK YOU! I am looking forward to supper tonight!
